With this in mind as we embark on 2017, consumers can expect to see a flurry of cocktails driven by high-end, aged tequilas on bar menus across the country.

At the 1920s inspired cocktail lounge, The Bar at The Spectator, master in-house cocktail craftsman Allen Lancaster Jr. serves up hand-crafted specialty cocktails using local ingredients and flavors from the south. With tequila being one of his personal favorite spirits to incorporate into libations, Allen created When Doves Cry, made with Altos Silver Tequila, Giffard Crème de Pamplemousse, Ramos Pinto Lagrima, Fresh Grapefruit Juice, Fresh Lime Juice, Ginger Beer and Fee Brothers Grapefruit Bitters, to tie in this rising trend.

When Doves Cry

1.50 oz. Altos Silver Tequila
0.75 oz. Giffard Crème de Pamplemousse
0.50 oz. Ramos Pinto Lagrima white port wine
1.00 oz. fresh grapefruit juice
0.50 oz. fresh lime juice
1.00 oz. ginger beer
2 dashes Fee Brothers Grapefruit Bitters

Combine ingredients (except ginger beer) in shaker with ice, shake vigorously, and strain into highball glass with ice. Top with ginger beer and garnish with grapefruit twist.
