2 heaping barspoons honeydew melon

.75 oz (22.5 ml) fresh lime juice

10 tarragon leaves

.5 oz (15 ml) Eli Mason Demerarra Syrup

1 oz (30 ml) HKB Hong Kong Baijiu

.75 oz (22.5 ml) Don Zoilo Manzanilla Sherry

1 egg white

Dale DeGroff’s Pimento Aromatic Bitters, as garnish

Muddle the honeydew, lime juice, demerarra, and tarragon in a shaker. Add the remaining ingredients. Dry shake, then add ice and shake again. Double-strain into a chilled coupe. Float the bitters as garnish.
