I recently became obsessed with pineapple in cocktails, so I decided to create a Pineapple & Coconut Margarita to savor a recent sunny afternoon. This cocktail will make you feel like you have escaped to a little tropical island.
Pineapple & Coconut Margarita
- 2 oz tequila
- 2 oz pineapple juice
- 1 oz coconut milk
- 1–2 tsp agave nectar, to taste
- Juice of 1/2 lime
- 1 cup ice, divided use
Garnish: coconut chips; mint sprig
Add all the ingredients to a cocktail shaker and shake.
Strain over ice into a rocks glass with the remaining 1/2 cup ice.
Top with coconut chips and a mint sprig.
