Created by Justin Simko of Charleston's The Bar at Husk , "The Bark is Worse" is a riff on a salty dog, incorporating, of course, gin and tonic, along with hints of grapefruit and allspice. The name is a double entendre, with nods to its inspiration, as well as the main ingredient in tonic water, quinine, which is made from tree bark.



2 oz Plymouth Gin 0.5 oz Jack Rudy Extra Bitter Tonic
2 dashes Angostura
2 dashes Saline
2 dashes Allspice Tincture


Add ingredients over a large ice cube in a rocks glass. Top with tonic and garnish with 2 grapefruit peels.
